Description

It is made on the island of Cyclades, Naxos. It has a pale yellow color with a compact mass and small holes scattered throughout. It is prepared in the form of heads from pasteurized cow’s milk or with a small percentage of sheep milk. It has a maximum moisture content of 38% and a minimum fat content on a dry basis of 40% by weight. Classified as hard cheese, it is a table cheese with a pleasant taste and light aroma.
